8.1 General
Exhaust hood undersized to stove is illegal with galvanized duct opens seam, illegal fire protection (grand fathered for a while).

The food service operation has not had the required certified Health Agent for 5 years. Prior to 2004 contracts there are only 7 meal contracts. This is causing refrigerator space problems for “kitchen privileges”. Kitchen is poorly cleaned and maintained, irregular proper cleaning of floors and surfaces (worn), appliances hood and duct. Physical plant and equipment and window screens are in poor condition. Ceiling is falling down at several locations.

Because APX is not for profit fraternity - self monitor and self provided Health Agent is required by the University of Illinois. Only if a problem occurs does a state Agent inspect.

Kitchen is used currently for room house/ kitchen privileges and meal plan.

Larges deficiencies: surface clean- ability at counter top, cabinets, stove, hood, walls exhaust fire suppression/halon/flood vs. size of cook top/range.

In the year of 2006 the current dry “Halon” system will no longer be grandfathered and the new fire system required on the exhaust hood will need to be replaced at the same time as a new exhaust hood. If a deep fryer is added to the kitchen then the hood needs to be larger in size.

Expansion - pantry and aisle wasted space for current occupancy. Waiter meal counter is erroneous Grease trap and disposal is broken and not used. The dining room (over 12 person occupancy) “2nd means of egress” cuts through kitchen from dining room.

The 3 hole sink hot water heater broke 2 years ago and is now operating on supplied domestic system, but does not reach temperature requirements.

There is no employee sink or bathroom, facility as required by Health Code. Dining room egress through kitchen should be modified before sprinkler is designed.
